Pumpkin Bread Recipe

Ingredients:

  • All-purpose flour
  • Baking soda
  • Baking powder
  • Brown sugar
  • Pumpkin pie spice
  • Ground ginger (optional if you are not using the pumpkin pie spice)
  • Salt
  • Pumpkin puree
  • Vegetable oil
  • Eggs

To customize this recipe, add up to 1 cup of chocolate chips, pecans, walnuts, or dried cranberries.

 

Instructions:

  1. Combine dry ingredients. In a large mixing bowl, combine all the dry ingredients including flour, baking soda, baking powder, sugar, pumpkin pie spice (or cinnamon and ginger), and salt.
    • Whisk together until evenly distributed and set aside.
  2. Combine wet ingredients and add to dry ingredients. In a medium mixing bowl, whisk together all the wet ingredients including pumpkin puree, oil, and eggs until smooth.
    • Pour the wet mixture into the dry mixture and mix together until no dry ingredients are visible. (Overmixing will make the bread denser and firmer.)
  3. Bake. Lightly grease a 9×5-inch pan (1 lb. loaf pan) with cooking oil spray, and pour in the batter, smoothing out the top with the back of a spoon. Bake in a 350 F preheated oven for 55-60 minutes on the bottom rack of the oven (to prevent too much browning) until golden brown and a toothpick inserted into the center of the cake comes out clean.
  4. Let cool for 10-15 minutes, then invert to remove the loaf. Serve warm or at room temperature.
